Smoked Sausage Minestrone
A quick-and-easy soup featuring smoked sausage, zucchini, stewed tomatoes and macaroni.Prep Time: 20 minutesTotal Time: 20 minutesMakes 4Ingredients
4 ounces (1/4 of 16-ounce package Eckrich® Smoked Sausage, cut into 1/2-inch-thick slices
1 can (14.5 ounces) chicken broth
1 cup water
1 medium zucchini, cut into 1/4-inch-thick slices
1/2 cup small shell macaroni, uncooked
1 can (8 ounces) stewed tomatoes, undrained, cut up
1 cup tomato-vegetable juice cocktail
3 tablespoons grated Parmesan cheeseDirections- Combine broth and water in large saucepan. Bring to a boil over high heat. Add zucchini and macaroni. Return to a boil. Reduce heat to low. Cook 8 minutes, or until macaroni is tender, stirring occasionally.
- Stir in sausage, tomatoes with their juice and the tomato juice cocktail; cook 5 minutes, or until heated through, stirring occasionally.
- Sprinkle with cheese just before serving.
