Rainbow Antipasto Pasta Salad
Easy to prepare pasta salad that features an array of colorful antipasto ingredients.Prep Time: 20 minutesTotal Time: 1 hourMakes 6Ingredients
1 6-ounce piece Eckrich Deli® Pepperoni, cut into 1/2-inch cubes
3 cups (8 ounces) dri tri-color rotini pasta
2 cups fresh broccoli florets
1 6-ounce piece mozzarella cheese, cut into 1/2-inch cubes
1 jar (6.5 to 7.5 oz.) marinated artichokes, drained
1/4 cup chopped red onion
3/4 cup balsamic vinaigrette or Italian salad dressing
Chopped fresh parsley or basil (if desired)Directions- Cook pasta according to package directions, adding broccoli during last 2 minutes of cooking. Drain and rinse with cold water.
- Place pasta, broccoli, pepperoni, cheese, artichokes, onion, and dressing in large bowl; toss to coat. Chill 30 minutes or until cold.
- Garnish with parsley or basil.
