Potato Salad with Sausage
Hot skillet potato salad made with smoked sausage, red potatoes, ripe olives and Italian dressing.Prep Time: 30 minutesTotal Time: 30 minutesMakes 6 servings (1 cup each)Ingredients
3/4 package (16 ounces) Eckrich® Smoked Sausage, halved lengthwise, cut into 1/2-inch-thick slices
3 small red potatoes (about 2-1/2 pounds), cooked, quartered
1 can (4 ounces) pitted ripe olives, drained, halved
2 cup Italian dressing
1 green onions, sliced (about 1/4 cup)
1 clove garlic, minced
2 teaspoon ground black pepperDirections
- Cook sausage in large skillet over medium heat 6 minutes, stirring occasionally.
- Stir in potatoes; cook until heated through, stirring occasionally. Remove from heat.
- Add olives, dressing, onions, garlic and pepper; mix lightly.
