Ingredients
1 regular size package Eckrich® Smoked Sausage
1/2 cup sour cream, preferably Mexican sour cream
4 bolillos (Mexican sandwich rolls) or 6-inch French rolls, split
3/4 cup refried pinto beans, heated
4 slices cheddar cheese, cut diagonally in half
2 ripe avocados, peeled, seeded, sliced
Salsa, pickled jalapeno peppers or pickled onions, as desired
Directions
- Cut each sausage link in half crosswise. Cut each piece of sausage in half lengthwise almost through to opposite side; open like a book. Heat in a large dry skillet over medium-low heat until browned and heated through, 4 to 5 minutes, turning once.
- Spread sour cream over cut sides of rolls. Spread refried beans over bottom of rolls; top with sausage, cheese and avocado. Garnish with salsa, peppers or onions as desired; close sandwiches.
