Sausage Brunch Sandwich
English muffins topped with a soufflé-like egg mixture and sliced smoked sausage.Prep Time: 10 minutesTotal Time: 30 minutesMakes 6Ingredients
1 regular size Eckrich® Smoked Sausage, cut into 18 slices
3 whole wheat English muffins, split, toasted
2 eggs, separated
1 tablespoon chopped fresh parsley
1 teaspoon spicy brown mustard
1/2 cup (2 ounces) shredded Cheddar cheeseDirections- Preheat oven to 350 degrees F. Arrange muffin halves, split sides up, in single layer in 13x9-inch baking dish; set aside.
- Beat egg whites in medium bowl with electric mixer on high speed until stiff peaks form; set aside. Beat egg yolks, parsley and mustard in small bowl with wire whisk until well blended. Add to egg whites; stir gently until well blended. Gently stir in cheese; spoon evenly onto muffin halves. Top each with 3 sausage slices.
- Bake 20 minutes, or until egg mixture is set.
