Southwest Sausage Skillet Supper
This one dish meal features smoked sausage, zucchini, tomatoes, rice and cheese.Prep Time: 35 minutesTotal Time: 35 minutesMakes 5 servings (1-1/3 cups each)Ingredients
1 tablespoon Vegetable Oil
1 package (16 ounces) Eckrich® Smoked Sausage Links, cut into 1-inch pieces
1 medium zucchini, halved lengthwise and sliced
1 medium onion, chopped (1/2 cup)
3 cups cooked rice
1 can (14.5 ounces) Diced Tomatoes with Mild Green Chilies, undrained
1 cup frozen whole kernel corn, thawed
2 teaspoons Chili Powder
1/2 teaspoon dried oregano leaves
1/4 teaspoon salt
1 cup (4 ounces) shredded Cheddar cheeseDirections
- Heat oil in large skillet over medium heat. Add sausage, zucchini, and onion; cook and stir 8 minutes.
- Stir in rice, diced tomatoes (with juice), corn, chili powder, oregano, and salt. Simmer over low heat 10 minutes, stirring occasionally. Remove from heat.
- Top with cheese; cover. Let stand 5 minutes, or until cheese is melted. Serve immediately.
