Smoked Sausage & Cheesy Rice Casserole
Baked rice, cheese & vegetables with smoked sausage pieces.Prep Time: 5 minutesTotal Time: 35 minutesMakes 6 servingsIngredients
1 package (16 oz.) Eckrich® Smoked Sausage, cut into 1/2-inch-thick slices
2 cups cooked instant or microwaveable rice
1/2 cup chopped onion
1/2 cup chopped red pepper
1 cup frozen peas (thawed & drained)
16 oz. processed cheese sauce
1 cup shredded sharp Cheddar cheese
Salt and pepper to tasteDirections- Preheat oven to 375° F. Lightly butter a 9x9x2.5 inch baking dish or a 2-quart casserole dish.
- Combine rice, onion, red pepper, peas, cheese sauce, salt and pepper.
- Spoon mixture into the lightly buttered baking dish. Evenly place sausage pieces into the mixture and top with shredded sharp Cheddar cheese.
- Bake 20-30 minutes or until bubbly and browned on top.
