Ingredients
1 regular size package Eckrich® Smoked Sausage, halved lengthwise, cut into 1/2 inch-thick slices
Cooking Spray
1-1/3 cups long-grain white rice, uncooked
1 medium onion, chopped (about 1/2 cup)
1 cup chopped celery
2 cans (14.5 ounces each) seasoned chili beans, undrained
1 can (14.5 ounces) diced tomatoes, undrained
2 teaspoons Cajun seasoning blend
Directions
- Cook rice according to package directions using 2-2/3 cups water.
- Spray large saucepan with cooking spray; heat over medium-high heat.
- Add sausage, onion and celery; cook 5 minutes, or until vegetables are
crisp-tender, stirring frequently.
- Add beans, undrained tomatoes and the seasoning blend; mix well.
- Reduce heat to low; simmer 10 minutes, or until heated through. Stir in rice.
Note: Great Substitute: Prepare as directed, substituting 1 teaspoon salt, 1/2 teaspoon chili powder and 1/2 teaspoon onion powder for the Cajun seasoning blend.
