Sausage and Spinach Frittata
Smoked sausage and chopped spinach team up to flavor this hearty frittata.Prep Time: 25 minutesTotal Time: 25 minutesMakes 4Ingredients
4 ounces (1/4 of 16-ounce package) Eckrich® Smoked Sausage, halved lengthwise, cut into 1/4-inch-thick slices
4 eggs
1/4 cup water
1/2 teaspoon salt
1/2 teaspoon dried basil leaves
1/4 cup ground black pepper
1 tablespoon margarine
1 package (10 ounces) frozen chopped spinach, thawed, drained and squeezed dryDirections- Preheat broiler. Beat eggs, water, salt, basil and pepper with wire whisk until well blended; set aside.
- Melt margarine in medium heat. Add spinach; cook 5 minutes, stirring frequently. Pour egg mixture evenly over spinach. Cook 2 minutes; top evenly with sausage.
- Broil, 4 inches form heat, 2 minutes, or until top of egg mixture is set and sausage is heated through. Cut into 4 wedges to serve.
