Ingredients
1/2 lb Eckrich Bacon Covered Ham, diced
8 large eggs
2 tbsp chopped chives
1/4 cup chopped green pepper
1/2 cup shredded Cheddar cheese
1/4 cup of milk ¼ tsp salt and pepper
1/2 tbsp margarine or butter
Directions
- Heat diced ham in skillet for 2 - 3 minutes until slightly browned.
- In medium bowl combine eggs, milk, diced ham, chives, green pepper, cheese, milk, salt & pepper.
- Melt margarine in skillet over medium heat; tilt pan to coat.
- Add egg mixture.
- Reduce heat to low.
- Cook until egg mixture is firm, stirring frequently.
- Plate and serve.
